The boss cooked this Irish Chicken Tikka Masala for the family last night and I have to say it was only fantastic!
The origin of the dish is not certain. Some trace the origins of the dish to the South Asian Community in the UK. Others claim that the dish was created in the Indian subcontinent.
Ingredients
- Chicken
- Natural Yogurt
- Ginger
- Garlic
- Tikka Spice
- Peppers
- Onion
- Coriander
- Basmati Rice
Method:
Cut up and dice the chicken.
Cover the chicken with the Tikka spice mix and allow to marinade for about 1-2 hours
Before you start to make the main part of the Irish Chicken Tikka Masala – put the rice on to cook.
Once the chicken is marinated – place it on a flat try and place it under the grill to cook.
Cut up the vegetables that you are going to use – Peppers, Onions
Begin to fry off the veg and add in some ginger and garlic to taste
Transfer the cooked chicken to the veg and add the natural yogurt and simmer until the rice is ready.
Pop it into a serving dish and garnish with some chopped coriander.
Serve with some Naan Bread or Poppadom’s (or Pompadoms as I call them)
